Exceed...?

I've noticed "Exceed" monsters recently in the Realistic cards section, but I have no clue what they are...
I've never seen a real "Exceed" monster and am just wondering what they are exactly?
How do you summon them? In the cards effects it only says something like.. "This card cannot be Summoned except by Exceed Summon"
But I've never seen it explained what Exceed Summoning actually is... Just a simple explanation would be nice.
