As ^he^ said, try to find a cure first. Then if it's not going to be cured, yes I admit, there are some things I'd still be afraid to do, but i'd porbably do them anyways.

In my penultimate week, I would go skydiving, parasailing, etc. If I survive all of that, in my final week, I would steal a nuclear bomb and blow it up. I would die right after it detonates.
