So how are Gravekeepers used? I don't really know much about them.

Keep most meta decks on the line with Necrovalley, generate advantage with Spy and Recruiter, pop stuff with Descendant, control the game with Sin Stardust and Cyber End, ocasionally troll with Royal Tribute, and keep your cards safe with tons of backrow.

well on the main point they lock the graveyard away, meaning that most decks then lose a major resource, and the nthey take advantage of it by being totally powered up and kickass with around 2000 ATK avg, with many search effects from the deck, precise destruction, and level 7-8 synchros, plus a boss monster that got bigger the longer you played, and their own set of graveyard effecting cards that ignore the lockdown their own card places on the grave normally.
it's a conservation play they make that makes them win the game, not an all out push to win it in an otk

Gravekeeper's are a fairly thoughtless deck to play for the most part. You play cards and set backrow. Set monsters and use their advantage. The main challenge comes in deck building and knowing what to set when. The monsters themselves are basically auto-pilot as some might call it. Overall a very rewarding deck to play in terms of amusement.

Gravekeeper's provide more entertainment for both players but to decide which deck would be more enjoyable to the player piloting it would be impossible. Every duelist enjoys different aspects of the game which is why we do not see a complete end to all meta decks and all alternate win condition decks. Empty Jar may be used my a more malicious player who enjoys forcing their opponent to sit through long plays. Gravekeeper's are a more controlling deck. There would be players who would not enjoy either.

Here's a small decklist:
3 Recruiter
3 Descendant
3 Spy
1 Assailant

3 Necrovalley
2 GK Stele

I know I'm missing a lot, but I'm tired right now. But that's the basic start for GK, without the staples. What I do remember, though, is that you do NOT want to add Royal Tribute. Because of Dark World.

Royal Tribute is good, though if you maindeck it you wouldn't play it until you were sure that the opponent wasn't playing DWs. And since playing it turn 1 is usually best, that means the side-deck is a better place for it. Especially since DWs will probably be Tier 1 this format, or close to it.

Actually you DO want to add Royal Tribute because of every other deck in the meta. Dark Worlds are already going to give you a thrashing in game one so weakening your matchup against all others seems extremely foolish bordering on stupidity. Furthermore, if you do not run Royal Tribute then there is no point running a small monster line-up so the line-up provided is of course wrong.
