I've always wondered about cards like this that change effects. What if the opponent doesn't control monsters? Can you block Torrential on an otherwise empty field?

2 Doomcal is insanely restrictive, though with any looser restriction that includes Doomcal this card would be a bomb. Even "2 Level 4 DARK Fiend-Type 'Knight' monsters" includes a Rabbit shortcut. Maybe if you included an effect that allows you to recycle Doomcals it would be more usable.

I believe you can still alter the effect of the Spell/Trap
But when it resolves, there's no monster for the effect to target
So it'll just go blank.
But do correct me if I'm wrong on that.

And I didn't understand what you were trying to say with that 2 Doom being "restrictive".

I was about to add one last effec to to it.
To allow you to return Doom to the field by returing this card to the Extra Deck if it doesn't have any Xyz attach to it.
But I gave it a second thought to see how you users would reply to it as it is now.

Doomcaliber cannot be Special Summoned.
The artwork actually reminds me of Dark Blade. Maybe you could combine them so the Xyz requires a Doomcaliber and 1 Dark Blade? Also, I support the idea of recycling a Doomcaliber, which can be as simple as:

When this card is destroyed by your opponent's card (either by battle or by card effect) and sent to your Graveyard: Add 1 "Doomcaliber Knight" from your Graveyard to your hand.
