I don't see how finding water is any good in a planet where anything that gets too close invariably burns to a crisp. Exploring should honestly be focused on places which the human race might be forced to move into at some point, not to those places which are the most likely to get swallowed first when the sun goes red. Considering that Mercury can have extreme colds as well as hots, it'd make sense that there'd be some ice.
