The attack now targets  the Summoned monster if possible. Card effects cannot be activated in response to this card's activation or effect."

Here, let me get that lore for you.
 

When a monster on your control side of the field is selected as targeted for an attack: target by your opponent's monster, Special Summon 1 monster with the same Level as the attack target from your hand to the field in face-up Attack Position. The attack now targets is then switched to the Summoned monster if possible. Card effects cannot be activated in response to this card's activation or effect.

The original attack target remains on the field, just that it's not getting attacked now.

 

But what happens if you Special Summon a monster that would be an illegal attack target? I'm going to assume the target won't change then, hence the "if possible" at the end of the effect.
