BulletMan
Used for decks requiring Polymerization. [/obvious] Lots of Decks that use Fusions don't use Polymerization. [/obvious]

Coffee Black
Only used in Elemental Hero Decks and for decks that focus on using Poly for some fusion monster. fixedKing of the Swamp is pretty good, even though it searches Poly, a card that's usually a -2. But countless fusions that were forgotten about love this card. Unfortunately, it only helps their deck, not the actual monsters :(.
Dr. Cakey
The fact that it searches Poly at least makes it better than most other fusion substitutes, but it's no Hex-Sealed Fusion.

Azuh
I'll rather run Fusion Sage now, since it searches Super Poly aswell.

Apparently that ruling is fairly old and has not been updated for a number of years. Fusion Sage's newest lore was released in Dark Beginning 2, the times when the card lores were being fixed and simplified, so I would think that Fusion Sage would have the same clause as Volcanic Rocket

Much better than Fusion Sage and Synchro Fusionist
